The event underscores the enduring legacy of the late Chef Charlie Trotter, a pioneer who profoundly influenced American fine dining by popularizing tasting menus, innovative wine pairings, and a commitment to sustainability. His former restaurant, a landmark in Chicago’s culinary history, now serves as the backdrop for this homage to his influential career.

A Stellar Lineup of Chicago Talent

The culinary maestros participating in this exclusive event are:
* John Manion: Renowned for his work at El Che Steakhouse & Bar and Brasero, Manion is celebrated for his live-fire Latin American cuisine, drawing inspiration from his childhood in Brazil. His restaurants have consistently garnered critical acclaim, with Brasero earning nominations for “Best New Restaurant.”
* Brent Balika: Currently Executive Chef at the Four Seasons Hotel Chicago, Balika previously held significant roles, including at RPM Steak. His expertise spans sophisticated steakhouse fare and refined hotel dining experiences.
