Scheduled for Sunday, September 14, this special evening promises a sophisticated reinterpretation of steakhouse classics, elevated by fine-dining artistry and featuring premium ingredients. The event underscores the enduring legacy of the late Chef Charlie Trotter, a pioneer who profoundly influenced American fine dining by popularizing tasting menus, innovative wine pairings, and a commitment to sustainability. His former restaurant, a landmark in Chicago’s culinary history, now serves as the backdrop for this homage to his influential career.

A Stellar Lineup of Chicago Talent

The culinary maestros participating in this exclusive event are:
* John Manion: Renowned for his work at El Che Steakhouse & Bar and Brasero, Manion is celebrated for his live-fire Latin American cuisine, drawing inspiration from his childhood in Brazil. His restaurants have consistently garnered critical acclaim, with Brasero earning nominations for “Best New Restaurant.”
* Brent Balika: Currently Executive Chef at the Four Seasons Hotel Chicago, Balika previously held significant roles, including at RPM Steak. His expertise spans sophisticated steakhouse fare and refined hotel dining experiences.
* Brian Ahern: The driving force behind Boeufhaus, a celebrated French-German brasserie in Chicago, Ahern is known for his dedication to old-world culinary techniques and ingredient quality. Boeufhaus has been lauded for its innovative take on the steakhouse concept.
* Casey Doody: A distinguished pastry chef, Doody, who now operates her own pastry consulting company, pastryCASE, has an impressive background including roles at Gibson’s Italia and as corporate director of pastry for the Boka Restaurant Group. She is recognized for her exceptional pastry creations, including a tiramisu lauded by the Chicago Tribune.

A Culinary Journey Featuring Westholme Beef and Expert Pairings

The seven-course tasting menu will showcase steakhouse staples reimagined through the chefs’ unique culinary lenses. A highlight of the menu will be premium Wagyu beef from Australia’s Westholme Beef, promising a luxurious and deeply flavorful experience.

Complementing the exquisite food, the event will feature meticulously curated beverage pairings. Master Sommelier Ken Fredrickson, founder of High Road Wine & Spirits, will present a wine pairing designed to enhance each dish. Fredrickson, who has a notable history with Chicago’s culinary scene and trained under both Charlie Trotter and Wolfgang Puck, brings a wealth of expertise to the table. Additionally, acclaimed mixologist Ryan Castelaz, partner of Milwaukee’s James Beard-nominated Agency, will craft a distinctive non-alcoholic pairing, ensuring a comprehensive sensory experience for all guests.

Honoring a Culinary Icon

This event not only celebrates the current caliber of Chicago’s chefs but also pays tribute to the enduring impact of Charlie Trotter. His restaurant, which operated for 25 years until 2012, was instrumental in shaping the city’s gastronomic landscape, popularizing concepts that are now commonplace in fine dining. The collaboration at Charlie Trotter’s itself is a significant nod to this legacy, echoing recent tributes and pop-up events that have brought the spirit of the iconic restaurant back to life, often involving many chefs who trained under Trotter, such as Grant Achatz.

The convergence of these four culinary talents at such a storied venue represents a significant moment in Chicago food news, offering diners an unparalleled opportunity to experience innovative cuisine crafted by leading chefs, all while honoring a pivotal figure in American gastronomy. Tickets for this exclusive event are available via OpenTable.
