Chicago, IL – The Bally’s Chicago Levy partnership is set to revolutionize the food and beverage landscape of Chicago’s newest entertainment destination. Bally’s Chicago has officially partnered with Levy, a prominent Chicago-based hospitality leader, to curate and manage all food and beverage offerings at its highly anticipated $2 billion casino resort, set to open in River West in late 2026. This strategic alliance signals a significant commitment to weaving Chicago’s rich and diverse culinary heritage into the guest experience of the forthcoming entertainment destination.

Bally’s Chicago Levy: A New Era for Chicago’s Entertainment Landscape

The Bally’s Chicago Casino Resort, under development on the former Chicago Tribune Publishing Center site at 777 W. Chicago Avenue, is poised to become a major attraction. The expansive project includes a 34-story, 500-room hotel tower, a 178,000-square-foot casino featuring over 3,300 slot machines and 170 table games, a 3,000-seat theater, and extensive public amenities like a riverwalk and a two-acre park. Construction, which began in 2024, is progressing steadily, with vertical construction of the hotel and casino underway, aiming for an opening in late 2026. A temporary Bally’s casino is currently operating at Medinah Temple.

Levy, known for its extensive experience in creating award-winning dining and hospitality programs for major sports stadiums, arenas, and entertainment venues nationwide, will oversee the curation, development, and operation of all culinary aspects at the Bally’s Chicago resort. As a company deeply rooted in Chicago’s gastronomic scene, Levy is tasked with developing a dynamic program that not only enhances the guest experience but also pays tribute to Chicago as a world-renowned destination for food and beverage. This crucial role of the Bally’s Chicago Levy collaboration is central to the resort’s appeal.

“Partnering with Levy is the natural choice as we seek to deliver a food and beverage program as dynamic and diverse as the city itself,” said Soo Kim, Chairman of Bally’s board. “In collaboration with Vibrant Development Group, we are dedicated to developing a culinary program that honors Chicago’s rich and diverse food heritage, while enhancing the guest experience through locally inspired, world-class hospitality at the new Bally’s Chicago Casino Resort.”

Honoring Chicago’s Diverse Food Heritage with Bally’s Chicago Levy

The partnership emphasizes a commitment to showcasing the vibrant flavors and diverse traditions that define Chicago’s food culture. Levy’s expertise will enable the resort to offer a wide spectrum of dining experiences, from casual eateries and a bustling food hall with 10-14 stalls to upscale restaurants, including a steakhouse and Asian-inspired venues. The goal is to cater to all tastes and price points, ensuring that visitors can savor everything from beloved local favorites to innovative chef-driven concepts. The Bally’s Chicago Levy alliance ensures a high-quality dining experience.

Levy’s portfolio includes managing food and beverage operations at iconic Chicago venues such as the United Center and Wrigley Field, further solidifying their connection to the city’s culinary landscape. This collaboration aims to provide an exceptional dining experience that reflects both the city’s storied past and its evolving gastronomic present, making the Bally’s Chicago Levy partnership a cornerstone of the new Chicago casino.

A Destination for Gaming and Gastronomy: The Bally’s Chicago Levy Impact

Christopher Jewett, chief development officer of Bally’s Chicago, highlighted the crucial role of restaurants in casino resorts, stating, “Restaurants are vital to a casino, ensuring guests stay at the property longer.” The strategic alliance with Levy is expected to create significant non-gaming revenue and elevate Bally’s Chicago into a premier destination for both gaming enthusiasts and food lovers alike, a testament to the vision behind the Bally’s Chicago Levy collaboration.

The selection of Levy, a Chicago-based entity with a proven track record in delivering high-caliber hospitality, underscores Bally’s dedication to integrating local talent and flavors into its flagship project. This news arrives as the resort project moves forward, with construction continuing to shape the future skyline of River West. The River West development is keenly anticipating the culinary contributions from the Bally’s Chicago Levy partnership.

As specific restaurant brands and chef partnerships are yet to be announced, anticipation is high for what Levy and Bally’s Chicago will bring to the city’s already renowned restaurant scene, cementing the Bally’s Chicago Levy venture as a significant development for Chicago’s dining and entertainment future.
