Among the new establishments is Ox Bar & Hearth, located in the bustling Lincoln Park neighborhood and scheduled to open its doors this summer. This project represents a significant collaboration between acclaimed Chef John Asbaty and experienced restaurateur Alain Uy. The culinary focus at Ox Bar & Hearth will be on refined Midwestern fare, highlighted by a prominent wood-burning hearth that is expected to be central to the cooking philosophy and ambiance. The beverage program is being carefully curated to complement the food, featuring a selection of Midwest spirits, craft beers, and wines, aiming to offer a distinct taste of the region.

Wolf & Company: A Bucktown Hub Along the 606 Trail

The Bucktown neighborhood is set to welcome Wolf & Company, slated for a June 2025 opening at 1752 N. Western Ave. This ambitious project is envisioned as a multifaceted venue, incorporating a full restaurant, a market component, a patio, and a dedicated cocktail bar. The cocktail bar operation will be led by Clare Andrejek, with the broader bar program overseen by Woody Tauke. A key feature distinguishing Wolf & Company is its patio, which will offer direct access to the 606 trail, providing a unique draw for trail users and neighborhood residents alike, positioning it as a potential community hub.

Carmine’s: Gold Coast Classic Reimagined

The Gold Coast district will see the highly anticipated reopening of Carmine’s, a classic Italian restaurant that originally opened in 1974. After undergoing a multimillion-dollar renovation, Carmine’s is scheduled to welcome patrons back this summer. The extensive refurbishment includes the addition of new indoor and outdoor bars, significantly enhancing its lounge and social spaces. A highlight of the renovation is an elevated terrace bar overlooking Rush Street, promising a vibrant al fresco experience in the heart of one of Chicago’s most prestigious areas.

Feverdream: Inspired Cocktails in Avondale

Adding to the city’s renowned cocktail scene, Feverdream is also set to open this summer. Located in the former Thank You space at 3152 W. Diversey Ave., this new venue will specialize in offering inspired cocktails. The project is spearheaded by Chef Mark Steuer and partners Kelsey Kasper and Jason Turley. Feverdream is part of the growing portfolio of Milkhorse Hospitality, signaling its commitment to creative and high-quality beverage experiences in Chicago.

These forthcoming openings collectively underscore the resilience and innovative spirit of Chicago’s hospitality sector. Spanning diverse neighborhoods and concepts – from Midwestern hearth cooking and trailside multi-venues to classic Italian revivals and dedicated cocktail bars – the Summer 2025 season promises to bring exciting new dimensions to the city’s already vibrant dining and nightlife landscape, offering residents and visitors alike a wealth of new options to explore.
