Chicago’s West Town neighborhood welcomes a new jewel. Bar Bambi officially opens its doors on February 14, 2026. This date lands perfectly for Valentine’s Day. Katie Renshaw brings a decorated career to her solo project. She has won numerous accolades. These include 2017 Speed Rack Midwest Champion. She was also Italicus Bar Artist of the Year in 2018. In 2019, she earned the prestigious title of U.S. World Class Bartender of the Year. Renshaw boasts over a decade of experience. She honed her skills at top Chicago establishments. These include Moneygun, Billy Sunday, and The Aviary. She also worked at GreenRiver and Hawksmoor Chicago. Her deep knowledge influences Bar Bambi’s concept. Renshaw calls opening her own bar a lifelong dream.

An Ethereal Design

Bar Bambi offers a unique ambiance. The 1,200-square-foot space seats 50 guests. Gensler, a renowned architecture firm, designed the interior. The design blends surrealism with comfort. It features eclectic textures and soft furnishings. A showstopping lighting installation anchors the room. Created by Lightology’s Pure Edge team, it offers adjustable colors and tones. This dynamic lighting shifts the ambiance throughout the day and night. Floor-to-ceiling windows provide a cinematic glow. A mirrored back bar with soft neon adds to the dreamy feel. The design balances industrial elements with a polished, ethereal escape. Subtle nods to the bar’s namesake add playful touches.

Innovative Cocktails and Playful Bites

The cocktail program is the heart of Bar Bambi. Renshaw focuses on seasonality and sustainability. Ingredients cross-utilize between the bar and kitchen. Techniques like clarification, fermentation, and forced carbonation elevate each drink. The menu features intentional cocktails with personality. They play with flavor, texture, and form. Standout drinks include the “Three Decibel Rule” and the “Repeat Offender”. Spirit-free options receive equal attention.

Chef Nicklus Byrns collaborates on the food menu. His experience includes Blue Hill at Stone Barns and Elske. The menu offers craveable bar snacks. Guests can enjoy items like a Crispy Halibut Sandwich and Chicken Liver Mousse. Fried spicy dill pickles also feature. Red currants, a nod to the original Bambi film’s opening scene, appear in select bites.

A New Hub for Chicago’s Nightlife

Bar Bambi aims to be more than just a bar. It seeks to offer a comfortable yet surreal experience. Renshaw wants guests to feel at home in this dreamlike space. The bar will operate Thursday through Monday. Hours extend to midnight on Fridays and Saturdays. Limited reservations are available via Toast. Most seating is first-come, first-served. This opening adds to Chicago’s trending bar and nightlife scenes. It solidifies West Town’s reputation as a key destination. Bar Bambi is set to become a notable spot for those seeking expertly crafted drinks and an immersive atmosphere. It represents a new chapter for Chicago’s celebrated cocktail culture.
