His culinary philosophy at this new establishment is built around the tenets of “steak, sea, and soil,” emphasizing open-fire cooking and globally-inspired flavors. The menu is designed to be both innovative and satisfying, moving beyond traditional steakhouse fare to include a robust selection of seafood and creative vegetable dishes. Guests can expect unique amuse-bouches, such as the W.T.F. (Wagyu, Truffle, Foie) and L.O.L. (Lobster, Onion, Lime), alongside an extensive library of salts and sauces to complement their chosen meats.

The interior design of Adalina Prime, crafted by Dunne Kozlowski (the same firm behind the original Adalina), creates a captivating atmosphere. The space is characterized by a chic and moody aesthetic, featuring lush greenery, sculptural wooden arches, and rich jewel-toned velvet accents. Natural materials, marble, and soft lighting contribute to an ambiance that feels both luxurious and inviting. The restaurant boasts an expansive dining room, an exhibition kitchen that offers a glimpse into the culinary action, a dramatic two-story wine cellar, and mural-covered walls. An exterior space and patio further enhance the dining options, providing a pleasant spot to enjoy the Chicago seasons.

A Menu That Dares to Be Different

While prime cuts of steak, including exclusive Illinois-raised Wagyu and dry-aged ribeye, are a centerpiece, Adalina Prime distinguishes itself with a diverse culinary offering. Large-format options like the 32-ounce Tomahawk steak, prepared with rosemary tallow, are designed for sharing. Seafood lovers can explore dishes such as Alaskan Halibut with Caviar Beurre Blanc or Chilean Sea Bass with Thai influences. For those seeking plant-based options, dishes like “Carrots a la Orange” with miso caramel and quinoa offer a creative take on vegetarian fare. The beverage program complements the food with inventive cocktails and a curated wine list.

Adalina Prime is strategically located in Fulton Market, a vibrant neighborhood known for its culinary scene. This makes it an attractive destination for corporate events, milestone dinners, and intimate gatherings. The restaurant is open Monday through Thursday from 4 pm to 10 pm, Fridays from 4 pm to 11 pm, Saturdays from 3 pm to 11 pm, and Sundays from 3 pm to 9 pm.
